Oh...Coconut Cake


Curtis' birthday was last week. He requested a coconut cake like he always does. This year he wanted the "Ultimate Coconut Cake". We saw it on a Bobby Flay Throwdown show.
To order the cake it cost $100 plus $113 shipping. Obviously that wasn't going to happen. So I decided to make it. It was 6 cake layers and weighed over 10 pounds. It had over 2 1/2 pounds of butter, 6 cups of cream, and 11 cups of coconut. You could only eat a sliver at a time.
But it truly is the ultimate coconut cake. Everyone that we shared it with (cause you would NEVER be able to eat it on your own) loved it. It truly is amazing. And by the way, Happy Birthday, Curtis!!

First haircut


Well, Megan is three years old. She has never had her hair cut. It was getting long, uneven, and ends were splitting. This is what it looked like before we took her to get her first cut.
We asked her if she wanted it cut and showed her some pictures online of what it would look like. She was so excited.
Here is the outcome. She absolutely loves it!

Our second back window since we moved here a year ago. We also have several cracks and dings in our front windshield. But we are going to wait til we leave this state before we fix those!

45 Below

It has been COLD here. Today the high temperature got to 42 below.

Ice Fishing

The other day Curtis and the boys went with a friend to go ice fishing. The temperature out that day was about -15. They had a heater inside the ice tent but it was too cold out for it. The boys only lasted about 2 two hours. Curtis came home about an hour and a half later. Nick caught the biggest fish. Curtis caught the other. They caught more but released the others.

Christmas

I know I am a bit late...and I have no good excuse. We have been enjoying the lazy days at our house.
Christmas was wonderful. Megan and the boys enjoyed themselves.



This is one of the last pictures of the puppy. She has gone on to her new home. The kids miss her. Sorry the picture isn't so great. Hopefully we will get a better one when we see her again.
We are loving the Rock Band. The Beatles songs are great!


We decided to switch it up a bit this year and make a gingerbread tree instead of a house. It was so much easier. It turned out pretty cute considering my lack of frosting talent.
